Nasu Dengaku – Miso Grilled Aubergine

Nasu Dengaku is one of my favourite dishes to cook and I always get lots of compliments on this. I love ordering this dish in Japanese restaurants too. Miso is a fermented soybean paste and is full of probiotics! Probiotics are beneficial bacteria which may help to contribute to a healthy gut microbiome. When you’re buying miso, ensure that you’re purchasing unpasteurised and organic miso for the good stuff. Many brands of miso are heat treated and may also include additives – this means that you won’t have the good bacteria.

This dish is so simple, and I love to serve this with plain steamed or boiled rice. Miso is naturally salty so, be sure not to add any extra salt!
